  • Granola Muffins

    Ingredients

    • 1 c. granola
    • 1/2 c. snipped dry apricots
    • 1/2 c. boiling water
    • 1 3/4 c. all-purpose flour
    • 1/2 c. sugar
    • 1/2 c. minced walnuts
    • 1 Tbsp. baking pwdr
    • 1/2 tsp salt
    • 1 x beaten egg
    • 2/3 c. lowfat milk
    • 1/2 c. veg. oil

    Directions

    1. In a mixing bowl combine the granola and apricots; pour boiling water over mix. Set aside.
    2. In another bowl stir together the flour, sugar, walnuts, baking pwdr and salt; make a well in the center. Stir the egg, lowfat milk, and oil into the granola-fruit mix; add in all at once to flour mix, stirring just until moistened. Grease muffin pans or possibly line with paper bake c. and fill 2/3 full with batter. Bake in 375 F oven for 20 to 25 min or possibly until done. makes about 18 muffins.
