Grandma Clark's Corn Casserole
Ingredients
- 1/2 c. Margarine
- 14 ounce Cream corn
- 14 ounce Kernel corn liquid removed Or possibly frzn kernel corn
- 1 c. Lowfat sour cream or possibly yogurt
- 2 x Large eggs, beaten
- 2 1/2 c. Biscuit mix
- 1/4 c. Cornmeal
Directions
- Heat marg in pan. Spread melted marg to cover pan, then pour into a bowl.
- Add in remaining ingredients to bowl and blend til just mixed. Pour into pan and bake for 40 to 50 min. Test as you would cake. Serve hot as a vegetable or possibly as potato replacement
