    Good ol' chicken soup

    in the Southern Hemisphere we are in winter so soup is a good warmer in the evenings ,here are some soups I found while browsing on the I africa site When winter strikes there's nothing more comforting than a bowl of steaming chicken soup to warm both body and soul. Here's a tried and tested version that keeps things simple:

    Ingredients

    • About five chicken pieces on the bone (it's worth having about two chicken breasts, one or two thighs and a drumstick or two for a variety of flavour)
    • 4 stalks of celery with leaves, finely chopped
    • 6 large carrots, peeled and cut into chunks
    • 1 large onion, chopped
    • 1 handful of dried barley
    • 1 clove of garlic, chopped
    • 1.5l of good chicken stock
    • 1 cup fresh parsley, finely chopped

    Directions

    1. Place all the celery, onion, garlic and carrot into a deep soup pot and sauté until the onions turn glassy.
    2. Now add the chicken pieces and barley and top the lot with the 1.5l of chicken stock.
    3. Bring to boil, cover and simmer gently for 2 hours.
    4. Strain the stock, discard the bones from the chicken.
    5. Return the stock, the chicken flesh and the vegetables to the pot.
    6. Add a little more water if necessary.
    7. Add the parsley and let it simmer for another 20 minutes or so.
    8. Taste - might want to add a little more salt and black pepper.
    9. Serve with good, crusty French bread.
