Forgotten Chicken
Ingredients
- 3 1/2 x to 4 pounds chicken pcs (any type you like or possibly a whole chicken, cut up)
- 1/4 c. margarine, melted
- 1 can condensed cream of mushroom soup
- 1 can condensed cream of chicken soup
- 1 can condensed cream of celery soup
- 1 x soup can warm water
- 1 c. regular, uncooked rice (not quick-cooking rice)
- 1 x (8-ounce) can mushrooms (sliced or possibly pcs), liquid removed
Directions
- Heat oven to 275. Spray a 9 x 13 inch baking dish with cooking spray. Mix melted margarine, soups and warm water in prepared baking dish till well-blended. Stir in rice and mushrooms. Lay chicken pcs, skin side up, on top of rice mix. Place the casserole in the preheated oven and forget about it for three hrs.
- Serves 4-6.Note: Bone-in chicken pcs are recommended, as boneless pcs tend to get too dry.
