  • Good Morning Pumpkin Pancakes

    Ingredients

    • 2 c. flour
    • 3 teaspoon baking pwdr
    • 2 tbsp. light brown sugar
    • 2 teaspoon grnd cinnamon
    • 1 teaspoon vanilla extract
    • 1 1/2 c. (12 ounce. can) evaporated lowfat milk
    • 1/2 c. Libby's solid pack pumpkin
    • 2 tbsp. vegetable oil
    • 2 Large eggs
    • 1 teaspoon grnd allspice

    Directions

    1. In a large mixing bowl, combine flour, baking pwdr, sugar, cinnamon, and allspice. Add in lowfat milk, pumpkin, oil, Large eggs, and vanilla; beat till smooth. Pour 1/4 to 1/2 c. of batter (depending on the size of pancake desired) onto heated and lightly greased griddle. Cook till top surface is bubbly and edges are dry. Turn. Cook till golden brown. Keep pancakes hot. Serve with favorite syrup. Great for Thanksgiving or possibly Christmas breakfast!
