Gingered Rhubarb-Apple Crisp
This dessert recipe is a great way to use your rhubarb, and it makes a nice everyday treat for the family. Serve this fruit crisp cold or warm, with a little cream or a scoop of ice cream. Use your favorite sweet apple in this recipe. Ingredients
- Filling:
- 2 Cups Fresh Rhubarb, Coarsely Chopped
- 3 Large McIntosh Apples, Peeled, Cored & Sliced
- 1 Cup Granulated Sugar
- 1 Tbsp. Crystallized Ginger, Minced (Candied Ginger)
- 1 Tbsp. All Purpose Flour
- Topping:
- 1/2 Cup All Purpose Flour
- 1/2 Cup Brown Sugar
- 4 Tbsp. Butter, Chilled & Diced (No Substitutions)
- 1/2 Tsp. Ground Ginger
- 1/2 Cup Quick Cooking Oats
Directions
- Preheat oven to 350°F.
- Place rhubarb, apples, 1-cup sugar, crystallized ginger, and 2 tablespoons flour in a large bowl; toss well. Turn into a greased 9-Inch pie pan.
- Combine topping ingredients in a bowl and mix with a pastry blender until crumbly. Spread crumb mixture over rhubarb and apples.
- Bake in a 350°F oven for 45 - 50 minutes, until fruit is tender and topping is browned. Serve warm.
