  • Ginger Carrots With Golden Raisins And Lemon

    • Veggies" from the American
    • 3/4 c. golden brown raisins
    • 1 3/4 c. warm water
    • 5 x -6 medium carrots (10-12 ounces) Boiling water, just sufficient to cover carrots
    • 2 tsp finely chopped fresh ginger
    • 1 tsp lemon juice
    • 2 tsp butter
    • 2 tsp brown sugar
    • 2 tsp cornstarch
    • 1 tsp grated lemon zest (peel)

    Directions

    1. Wash hands. In medium bowl, combine raisins and warm water. Let stand for about 15 min. Meanwhile, peel and slice carrots diagonally into 1/2 inch slices. In medium pot of boiling water, add in carrots, ginger and lemon juice.
    2. Cook 6 to 7 min. Drain. Drain raisins, reserving 3/4 c. liquid; set aside. In skillet, heat butter over medium heat. Add in brown sugar and cook 30 seconds. Mix together reserved raisin water and cornstarch. Add in to butter/brown sugar mix. Cook about 1 minute, till thickened. Add in raisins and carrots and cook 1 minute. Add in lemon zest.
    3. Yields 4 servings.
