  • Cinnamon Basmati Rice With Golden Raisins

    Ingredients

    • 1 Tbsp. unsalted butter
    • 1/2 med yellow onion cut 1/4" dice
    • 1 pch grnd cloves
    • 1/4 tsp grnd cinnamon
    • 1 c. uncooked basmati rice
    • 1 x bay leaf
    • 1 x cinnamon stick
    • 2/3 c. golden brown raisins Coarse salt - to taste Freshly-grnd black pepper to taste

    Directions

    1. Heat the butter in a medium saucepan over medium heat. Add in the onion, cloves, and grnd cinnamon; cook till onion is translucent/soft and mix is fragrant, about 5 min.
    2. Place rice in a sieve, and rinse under cool running water. Add in rice to saucepan, and stir so grains are coated with butter mix.
    3. Add in bay leaf, cinnamon stick, raisins, 1 tsp. salt, and 1/4 tsp. pepper. Stir in 2 c. water. Raise heat, and bring to a boil. Cover, and reduce heat to a simmer. Cook till water has been absorbed and rice is cooked, 10 to 15 min.
    4. Remove pan from heat, and let stand, covered, 5 min more. Season with salt and pepper, and serve.
    5. This recipe yields 4 servings.
