Ginger Bars
Womans Day - September 2010 Ingredients
- 1/2 stick (1/4 cup) butter
- 3/4 cup packed brown sugar
- 1 large egg
- 2 tsp vanilla
- 3/4 cup white whole-wheat flour
- 1/4 cup whole ground flaxseed meal
- 2 tsp ground ginger
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup chopped crystallized ginger
Directions
- Heat the oven to 350 F
- Line a 9 x 9 inch baking pan with nonstick foil
- Allow the foil to extend about 2 inches above the pan at both ends.
- Melt the butter over medium-low heat in a medium saucepan
- Remove from the heat
- Stir in the brown sugar
- Whisk in the egg and vanilla
- Whisk in the flour, flaxseed meal, ground ginger, baking powder, and the salt until blended
- Stir in the crystallized ginger
- Spread evenly in the prepared pan
- Bake for 18 to 24 minutes or until a wooden toothpick inserted in the center comes out clean
- Allow to cool in the pan on a wire rack
- Holding the foil by the ends, lift from the pan onto a cutting board
- Carefully cut lengthwise into 4 strips
- Cut each strip in 6
- Remove the foil
