Well nothing would make me happier than to have to cook for mom. If I had one wish in the world it would be to have her back again. Every Mother's Day, I blog on a recipe I really think Mom would have flipped over. Since my blog is dedicated to her and her teachings, I again wish her peace where ever she is and hope she can hear me say Happy Mother's Day, until we meet again. All the years we had together were precious minutes and joyous memories.

In a small bowl add the eggs, milk, sugar, vanilla, and beat together with a whisk. Add salt and mix. Slowly add flour whisking in rapidly to make sure you have no lumps, keep whisking until all the flour is entered and blended smoothly. Last whisk in the butter.

Prepare the muffin tin with heavy sprayed oil. This makes around 7 or 8 - 3/4 filled, this recipe can be doubled and still comes out fine. Bake in a preheated oven on 400 degrees for around 15 minutes or until browned and puffed on top.

Carefully lift onto your plate, fill the center with desired toppings. Fresh fruits sprinkle with sugar and topped with whipped cream or powdered sugar.
