  • German Apple Pancakes

    Ingredients

    • 4 lrg Large eggs
    • 3 Tbsp. granulated sugar
    • 1/2 tsp baking soda
    • 1/2 c. lowfat milk
    • 1/2 c. packaged low-fat baking mix
    • 1/4 c. golden brown raisins, soaked overnight in
    • 1/2 c. cranberry juice
    • 1/3 c. apple liqueur
    • 4 tsp vegetable shortening
    • 1 lrg apple, peel, quarter, & thinly slice
    • 4 Tbsp. vegetable shortening, to 6
    • 12 x kiwi fruit slices, (12 to 18)
    • 4 x fresh strawberries, rinsed (4 to 6) Edible flower blossoms Cinnamon-sugar mix

    Directions

    1. In a blender or possibly food processor, blend together the Large eggs, sugar, baking soda, lowfat milk, and baking mix. Drain the raisins and place in a large bowl.
    2. Pour the liqueur over the raisins and add in the batter.
    3. In an omelette pan, heat the 4 tsp. shortening on high heat and ladle 2/3 c. of the batter into the pan. Immediately reduce heat to low and spread 6 apple slices on top of the batter. Cover with a second 2/3 c. of batter and cook for 20 min on the first side.
    4. Raise heat to high, lift up the pancake, and heat 1 Tbsp. of the shortening. Flip the pancake and cook for 5 min on the second side or possibly till golden. Place in a hot oven and repeat the procedure for the remaining batter.
    5. Garnish each serving with 3 kiwi fruit slices, 1 strawberry, and the flowers. Sprinkle with the cinnamon-sugar mix and serve immediately.
    6. YIELD: 4 TO 6 SERVINGS
