This is a Secret Recipe Club special event: Bunnies and Leprechauns.
I am told that these special days happen whenever there are five Monday’s in a month – as the Club is meant to have an event every Monday.
And I’m not telling you any more because, well, you likely don’t care. Just relax and enjoy the recipes.
This week it’s meant focus on foods for St. Patrick’s Day and / or Easter since March has both holidays this year.
Which, of course, started me reminiscing about our year in Ireland.
Since I didn’t want to track down a traditional Irish Easter dinner of a pig head I opted for that Irish staple…. the potato
Actually, I saw Nichole’s recipe for Garlic Parmesan Potato Chips on her blog, Cookaholic Wife and I decided I needed to work it into the theme….
So…. as the Irish truly love potatoes (see below) it works for St. Patrick’s Day and, if you would be so lucky to find new potatoes to use it would be a perfect side dish for Easter.
There you have it – a dish for both holidays.
The only changes I made to Nichole’s recipe was to cut it down to two servings, use regular potatoes as I can’t get baking potatoes, and lower the oven temp a bit…
Garlic Parmesan Potato Chips
Total time: 55 minutes
Ingredients:
Instructions:
Soak potato slices in cold water for 20 minutes.
Remove and pat dry.
Mix olive oil and garlic powder together in a bowl.
Add potato slices and stir/turn to coat.
Lay on a nonstick baking sheet (if you have one – just makes it easier) with a lip. Put in a 400F (200C) oven and bake for 20 minutes.
Remove, turn potato slices, sprinkle with Parmesan and return to oven for 10 minutes longer.
When done, remove from pan and serve. These should be a lovely golden brown and very crunchy.
The importance of the potato in Ireland was driven home the first time we went to dinner at our local restaurant.
We had been living in Monkstown, County Cork, for all of two weeks. Our house was just down the street from the Bosun, a popular restaurant over-looking Cobh Harbor.
The first time we ate there our main course, good Irish lamb, was artfully arranged on the plate with some green vegetables.
We were somewhat surprised about the lack of potato, this being Ireland.
Not to worry…. A few moments later a young lady came to our table. with a tray that must have weighed as much as she did, balanced on one arm.
“Madame” she said, “we have au gratin, boiled with butter, jacket (baked for the Americans), fried with onion, chips (French Fries to the Yanks) and cooked in cream.”
I said “The au gratin, please”.
She served me and continued to look at me, finally saying “and what else, ma’am?”
“A few of the boiled, please.”
She served and continued to stare.
I finally explained that I had been ill and didn’t have much of an appetite.
That seemed to satisfy her and she moved on to mon mari.
He obligingly took 3 out of the 6, right off.
That was better but she still moved off a little bewildered. She was determined to see us properly fed,
however, and came back twice more.
Then I found these Caramelized Scallops.
