Full Of Beans Salad
Ingredients
- 1/2 lb green beans stem ends removed, halved crosswise and blanched
- 1/2 lb yellow wax beans stem ends removed, halved crosswise and blanched
- 4 x scallions, 3" of green left on thinly sliced
- 1 c. canned dark-red kidney beans liquid removed, rinsed
- 1 c. canned black beans liquid removed, rinsed
- 1 c. canned garbanzo beans liquid removed, rinsed Salt to taste Freshly-grnd black pepper to taste
- 1/2 c. Red-Wine Vinaigrette (see recipe)
- 2 Tbsp. minced flat-leaf parsley for garnish
Directions
- Place fresh beans, scallions and canned beans in a large bowl. Season with salt and pepper. Toss with vinaigrette and sprinkle with minced parsley.
- This recipe yields 6 servings.
- Comments: Add in the green beans to the salad just before serving so they don't discolor.
