Ingredients

  • 1/2 lb green beans stem ends removed, halved crosswise and blanched
  • 1/2 lb yellow wax beans stem ends removed, halved crosswise and blanched
  • 4 x scallions, 3" of green left on thinly sliced
  • 1 c. canned dark-red kidney beans liquid removed, rinsed
  • 1 c. canned black beans liquid removed, rinsed
  • 1 c. canned garbanzo beans liquid removed, rinsed Salt to taste Freshly-grnd black pepper to taste
  • 1/2 c. Red-Wine Vinaigrette (see recipe)
  • 2 Tbsp. minced flat-leaf parsley for garnish

Directions

  1. Place fresh beans, scallions and canned beans in a large bowl. Season with salt and pepper. Toss with vinaigrette and sprinkle with minced parsley.
  2. This recipe yields 6 servings.
  3. Comments: Add in the green beans to the salad just before serving so they don't discolor.
