Fresh Apple Muffins with Toffee Topping
Fresh Apple Muffins with Toffee Topping bring back fond childhood memories of Halloween and toffee apple treats. Ingredients
- 1 1/4 cups Fresh apple(peeled & diced)
- 1 1/4 cups milk
- 1/2 cup butter (melted)
- 1/3 cup maple syrup
- 1 1/2 cups graham cracker crumbs
- 1 1/2 cups all-purpose flour
- 1 egg
- 1 tbsp baking powder
- 1 tsp cinnamon
- 1/2 tsp salt
- 1/2 cup Skor Toffee Bits (for topping)
Directions
- Preheat oven to 400º F and line muffin tin with liners (or use silicone muffin cups).
- Peel apples, core and dice. Set aside.
- In a bowl beat the egg, add milk, melted butter, maple syrup and graham crumbs. Mix to combine.
- In another bowl whisk the flour, baking powder, salt and cinnamon.
- Add the wet mixture to the dry mixture, and stir to moisten.
- Fold in the apples.
- Scoop batter into muffin cups.
- Top with Skor bits.
- Bake for approximately 18-20 minutes.
- Remove from oven. Let cool slightly in pan. Transfer to cooling rack.
