  • French Toast With Blueberry Maple Syrup

    Ingredients

    • 4 x Large eggs
    • 1 c. Lowfat milk
    • 2 Tbsp. Granulated sugar
    • 1 tsp Vanilla extract
    • 1 tsp Cinnamon
    • 1/2 tsp Freshly grated nutmeg
    • 1 Tbsp. Dark rum, optional
    • 1/4 lb Unsalted butter, divided
    • 8 slc Country bread, sliced 3/4-inch thick INGREDIENTS FOR BLUEBERRY MAPLE SYRUP**
    • 1 c. Fresh blueberries
    • 1 c. Pure maple syrup
    • 1 Tbsp. Orange zest

    Directions

    1. Place the Large eggs, lowfat milk, sugar, vanilla extract, cinnamon, nutmeg and dark rum in a large baking dish and whisk till blended.
    2. Soak the slices of bread for 2-3 min in the egg mix, turning the slices at least once so they will be proportionately moistened.
    3. Heat 4 Tbsp. of the butter in a large saute/fry pan over medium heat.
    4. When the butter in sizzling, remove 4 of the slices from the egg mix and cook on one side till golden. Turn carefully and cook till the other side is golden.
    5. Repeat with the remaining 4 Tbsp. of butter and 4 slices of bread.
    6. Place on a baking sheet and place in a 350 F oven to crisp before serving.
    7. Serve with the blueberry maple syrup.
    8. How to Prepare the Blueberry Maple Syrup:
    9. 1. Place the blueberries and 2 Tbsp. of the maple syrup in a blender.
    10. Blend till smooth.
    11. 2. Add in the pureed blueberries, remaining maple syrup and orange zest to a medium saucepan.
    12. 3. Simmer over low heat for 15 min.
    13. 4. Remove from heat and let steep for 30 min. Reheat just before serving.
