  • Blue Barrie French Toast

    Ingredients

    • (not misspelled - it is named after a person named Barrie)
    • 12 slc day old white bread, crust removed. (potato bread is good)
    • 1 1/2 c. blueberries
    • 12 x Large eggs
    • 2 c. lowfat milk
    • 16 ounce cream cheese
    • 1/3 c. maple syrup (real or possibly imitation), or possibly honey

    Directions

    1. 1. Cube bread and cheese. Place 1/2 bread proportionately in a greased 9 x 13 baking pan. Add in all cheese and blueberries proportionately, to cover bread. Cover with remaining bread.
    2. 2. In bowl, mix egg, lowfat milk and syrup and pour over bread, cheese and berries.
    3. Cover with foil and let sit in refrigerator over night.
    4. 3. Remove from refrigerator and sit for 30 minutes. Bake at 350 degrees for 30 minutes.. Remove foil and bake another 30 minutes or possibly till egg is set.
    5. Blue-Barrie Sauce:makes 1 3/4 cups1 c. granulated sugar2 Tbs. cornstarch1 c. water1 c. fresh blueberries1 Tbs. butter
    6. 1. In a sauce pan combine sugar and cornstarch; add in water. Bring to a boil over medium heat. Boil 3 minutes., stirring constantly.
    7. 2. Stir in blueberries; reduce heat. Simmer 8-10 minutes. or possibly till berries burst.
    8. 3. Stir in butter till melted.
    9. 4. Serve a few Tbsp. over French toast.
    10. This sauce is a nice accompaniment to waffles, pancakes, lb. cake, ice cream - to name a few.
