French Potato Pie with Cheese and Chives

- 1 deep dish nine inch frozen pie shell
- 1 cup mashed potatoes (can use instant)
- 2 cups cottage cheese
- 1/4 cup cream cheese, 2 oz
- 2 eggs
- 1/2 cup sour cream
- 1/3 cup grated Parmesan cheese
- 1/3 cup chopped chives
- 1 T. chopped parsley
- Salt and pepper to taste
Directions
- Prepare pie shell. baked in a 400* F oven for about 10 minutes or until very lightly browned.
- Mix remaining ingredients and beat until thoroughly blended.
- Pour mixture into prepared pie shell and place on cookie sheet. Sprinkle top with additional grated Parmesan cheese.
- Bake in a 350*F oven for about 40 to 45 minutes or until top is golden brown.
