  • French Onion Salisbury Steak

    Think of Salisbury steak as an elegant entree of seasoned hamburger in a sauce. In this case, the sauce is inspired by the classic French onion soup. It is inexpensive to make and easy to prepare.

    Ingredients

    • 20 oz ground chuck beef
    • ¼ c freshly minced parsley
    • 2 T minced scallion
    • 1 T kosher salt
    • ½ t ground black pepper
    • 2T all-purpose flour
    • 1T olive oil
    • 1 large yellow onion, peeled and thinly sliced
    • 1 t sugar
    • 1 T minced garlic
    • 1 T tomato paste
    • 2 c beef broth
    • ¼ c dry red wine
    • ¾ t kosher salt
    • ½ t dried thyme leaves
    • 4 cheese toasts
    • 4 t freshly minced parsley
    • 4 t Parmesan cheese, shredded
    • For the Cheese Toasts
    • 4 slices French bread, cut diagonally ½ inch thick
    • 2 T unsalted butter, softened
    • ½ t grated garlic
    • 1/8 t paprika
    • ¼ c grated Swiss cheese
    • 1 T grated Parmesan cheese

    Directions

    1. Combine the beef, parsley, scallion, salt and pepper and mix well. Divide the meat mixture equally into four parts and shape each into ¾-inch thick oval patties. Dredge each patty in flour on both sides, reserving 1 teaspoon flour.
    2. Heat oil in a sauté pan over medium-high heat until oil shimmers. Sauté the patties until browned, about 3 minutes on each side. Remove patties from pan and reserve covered with foil.
    3. Add the sliced onion to the pan, Sprinkle with sugar and sauté, over medium heat for 5 minutes. Stir in garlic and tomato paste and sauté for 1 minute or until paste begins to brown. Sprinkle onion mixture with reserved teaspoon flour and sauté for 1 minute. Stir in the broth and wine, and then add the salt and thyme. Raise heat and bring to a boil. Cook until liquid is reduced to a thin sauce.
    4. Return the meat patties to the pan reduce the heat to medium-low, cover and simmer for 10 minutes.
    5. Remove the patties from the pan. Divide the onion sauce equally among 4 large warmed bowls. Set a cheese toast in the center of each bowl. Set a meat patty on top of each cheese toast. Spoon some onion sauce over each meat patty. Sprinkle minced parsley and shredded Parmesan cheese over each bowl and serve.
    6. Directions for the Cheese Toasts:
    7. Preheat oven to 400 degrees F. Place bread on a baking sheet. Combine butter, garlic and paprika in a bowl. Spread butter mixture on one side of each slice of bread. Combine the cheeses and sprinkle evenly over the buttered side of the bread. Bake until bread is crisp and the cheese is bubbly, about 10-15 minutes.
