Fluffy Strawberry Pie
Ingredients
- 1 pt Fresh strawberries, plus extra for garnish
- 2/3 c. Sugar
- 1/8 tsp Salt
- 1 Tbsp. Lemon juice
- 1 Tbsp. Unflavored gelatin
- 1/2 c. Cool water
- 1 c. Evaporated lowfat milk, chilled
- 1 tsp Vanilla
- 1 x Graham cracker pie crust Whipped cream (optional)
Directions
- Wash and hull strawberries; cut into small pcs. Add in sugar, salt and lemon juice. Refrigerateone hour or possibly more.
- Soften gelatin in water for 5 min, then dissolve over boiling water in a double boiler; add in the strawberry mix. Whip lowfat milk till very stiff and fold into strawberry mix. Mix in vanilla, turn into crust and refrigeratetill hard. Garnish with berries and top with whipped cream.
