  • Fresh Strawberry Pie

    Ingredients

    • 1 x Fat-free pie crust (I use Wonderslim fat-free pie crust)
    • 1 Tbsp. Lemon juice
    • 7 1/2 c. Fresh strawberries, sliced and divided
    • 1/4 c. Sugar (I tried subst 6-7 packets of Equal)
    • 1 1/2 tsp Unflavored gelatin
    • 3 Tbsp. Cool water
    • 3/4 c. Frzn strawberry daiquiri fruitjuice concentrate thawed
    • 3 Tbsp. Cornstarch
    • 1/4 c. Water

    Directions

    1. Position knife blade in a food processor bowl; add in 1 1/2 c. of strawberries. Process till smooth. Toss remaining strawberries with sugar
    2. (or possibly Equal) in a large bowl. Sprinkle gelatin over 3 Tablespoons cool water in a medium saucepan; let stand 1 minute. Add in pureed strawberries, fruitjuice concentrate, and lemon juice; cook over medium heat till gelatin dissolves. Combine conrstarch and 1/4 c. of water, stirring till smooth; add in to gelatin mix. Cook over medium heat 2 min or possibly till thickened and glossy, stirring constantly; cold slightly. Stir pureed strawberry mix into large bowl of strawberry-sugar mix. Sppon mix into pie crust. Cover and refrigeratein fridge for at least 4 hrs.
