    Have you realized the similarity between figs and eggs when they are sliced? This Fig and Egg Salad came out when I noticed how they look like each other the other day when Yusuf was eating sliced eggs and I was having fresh figs at breakfast. Right, I do love eating fresh fruit as a dessert to end my breakfast. I feel like I’m renewed and completely ready for the new day with the help of fresh fruits. I had never combined fig and egg before except in cookies or cakes, but I just saw the image of the salad in my mind’s eye that morning and I was pretty sure about the result.

    I’m a big fan of eggs and people around me know very well that I eat an egg every morning. I eat it in any form and I love to combine it with any vegetable like tomatoes (see my Egg Stuffed Tomatoes?) potatoes, onions, zucchini, beans or mushrooms. I hadn’t tried it with any fruit though, until yesterday. It was an amazingly scrumptious combination in this Fig and Egg Salad! What’s more, it’s so easy and quick!

    The sweetness of figs really enriches the flavor of eggs. Chill figs beforehand to make it a complete summer salad and it’s even better with fresh mint sprigs! Try to imagine the freshness coming from mint leaves and chilled figs accompanying your morning egg salad! Wouldn’t it be a better morning in summer?

    For me, egg salad doesn’t require many ingredients; a pinch of salt, your favorite spices and a little olive oil drizzled over eggs would be enough. I love it as a sandwich too just like Nami’s quick and scrumptious Egg Salad Sandwich Bento, but I wanted my salad plain and without bread this time.

    I wanted to keep things simple in this Fig and Egg Salad, so I didn’t add any further ingredients to it. No mayo, no cream or cheese in this salad! It is a real healthy and tasty treat!

    Let me give you a secret: Red hot chili pepper pairs perfectly with figs! I often use it on eggs and I love it, but I was quite suspicious about figs. It was even better than eggs! I used it in a very little amount and the subtle flavor of chili was like coming from the tiny seeds in figs. No need to mention the lovely color it adds to the salad! No other spices are needed for this salad!

    You must try this quick and refreshing egg salad before fig season ends in your area! We have already come to its end here and I think figs will disappear from markets within a week. As a big fan of figs, I think this salad has become my favorite way of eating figs and I will be making it more often next summer!

    Instructions

    Slice eggs and figs into four and place them on a plate.

    Toss over fresh mint leaves.

    Sprinkle salt and chili pepper over them.

    Drizzle olive oil on the top and serve.
