FARFALLE WITH TOMATOES ,OLIVES AND ONIONS AND SPINACH
This recipe is a vegetarian dish ,fast healthy and tasty feel free to use another type of cheese if feta is not your favorite ,serve this with olive flatbread and a good cold beer on a hot summer day ...yummy Ingredients
- i box farfalle [bow tie pasta] cooked
- 1 cup sliced yellow onion
- 2 cups grape tomatoes halved
- 3 cups baby spinach
- 1/2 cup crumbled feta cheese
- 1 chopped garlic clove 4 tbls shaved parmigiano cheese
- 1/2 cup of greek or black olives chopped
- 2 tbls good olive oil
- salt .pepper and 1 tsp dried oregano
- 1 tbls white wine vinegar
Directions
- Heat 1 tbls oil in a large pan over med-high heat add onion and oregano saute 10 min.add garlic cook 2 min.add tomatoes and olives and vinegar add pasta and spinach salt and pepper..
- and add parmigianno cheese .and remaining olive oil...remove from the heat line a platter with some fancy greens and pile pasta on the top ....you can decorate with some chopped olives on top and some grape tomatoes ...RECIPE FOR OLIVE FLAT BREAD.....
- PREHEAT OVEN TO 450'.
- Unroll1[11 ounce can refrigerated thin -crust pizza dough onto a baking sheet...Combine 1/12 tbs olive oil.. 1'2 tsp crushed red pepper and 1 minced garlic clove ; brush over dough Sprinkle dough with 1,2 cup chopped kalamata olives .bake at 450 degrees for 11 min.or until brown and done.TOP with 2 tbls thinly sliced basil and enjoy enjoy with your meal......
