  • Famous Knudsen Coffee Cake

    Ingredients

    • 1/2 c. Knudsen butter
    • 1/2 c. shortening
    • 1 1/4 c. sugar
    • 2 x Large eggs, beaten
    • 1 c. Knudsen Hampshire Lowfat sour cream
    • 1 tsp vanilla
    • 2 1/2 c. sifted cake flour
    • 1 tsp baking pwdr
    • 1/2 tsp baking soda
    • 1/2 c. finely minced mixed nuts
    • 2 Tbsp. sugar
    • 1/2 tsp cinnamon
    • 1/4 c. chopped glazed fruit Powdered sugar Red and green glazed cherries Preheat oven to 350 degrees. Cream together butter, shortening and sugar.

    Directions

    1. Add in Large eggs, lowfat sour cream and vanilla and beat well.
    2. Sift the dry ingredients together and gradually mix into the butter-sugar-egg mix. When mix is too thick to beat, stir with spoon till well mixed.
    3. Spread half the mix in a buttered 9" tube spring-form pan and sprinkle with half of the topping ingredients which have been combined.
    4. Spread rest of dough on top and sprinkle with remaining topping.
    5. Bake in moderate oven (350 degrees) 1 hour or possibly till a toothpick comes out clean.
    6. Let cold 15 to 20 min in pan before turning out.
    7. Sift powdered sugar on top while still hot and arrange red and green laced cherries on top to look like holly and berries.
    8. Serves 10 to 12.
