Famous Knudsen Coffee Cake
Ingredients
- 1/2 c. Knudsen butter
- 1/2 c. shortening
- 1 1/4 c. sugar
- 2 x Large eggs, beaten
- 1 c. Knudsen Hampshire Lowfat sour cream
- 1 tsp vanilla
- 2 1/2 c. sifted cake flour
- 1 tsp baking pwdr
- 1/2 tsp baking soda
- 1/2 c. finely minced mixed nuts
- 2 Tbsp. sugar
- 1/2 tsp cinnamon
- 1/4 c. chopped glazed fruit Powdered sugar Red and green glazed cherries Preheat oven to 350 degrees. Cream together butter, shortening and sugar.
Directions
- Add in Large eggs, lowfat sour cream and vanilla and beat well.
- Sift the dry ingredients together and gradually mix into the butter-sugar-egg mix. When mix is too thick to beat, stir with spoon till well mixed.
- Spread half the mix in a buttered 9" tube spring-form pan and sprinkle with half of the topping ingredients which have been combined.
- Spread rest of dough on top and sprinkle with remaining topping.
- Bake in moderate oven (350 degrees) 1 hour or possibly till a toothpick comes out clean.
- Let cold 15 to 20 min in pan before turning out.
- Sift powdered sugar on top while still hot and arrange red and green laced cherries on top to look like holly and berries.
- Serves 10 to 12.
