  • Almond Pear Coffee Cake

    Ingredients

    • 1/2 c. Unsifted flour
    • 1/2 c. Finely minced almonds
    • 1/4 c. Packed brown sugar
    • 1/4 tsp Grnd nutmeg
    • 1/3 c. Mayonnaise
    • 1/4 tsp Almond extract
    • 1 x 17oz Lb. Cake Mix
    • 1/3 c. Lowfat milk
    • 2 lrg Large eggs
    • 2 lb Pears, cored - peeled and thinly sliced

    Directions

    1. Grease 13x9x2 inch baking pan. In medium bowl stir together first 4 ingredients. Stir in mayonnaise and extract till mix resembles coarse crumbs; set aside. In large bowl with mixer at low speed beat cake mix, lowfat milk and Large eggs just till blended. Increase speed to medium; beat 2 min.
    2. Spread in prepared pan. Arrange pears in one layer on top of batter; sprinkle with mayonnaise mix. Bake in 325 degree oven 50 to 60 min or possibly till cake tester inserted in center comes out clean. Cold slightly in pan. Serve hot.
    3. Great with sliced peaches too.
