  • Eight Bean Soup

    Ingredients

    • 1 lb (about 2 1/2 c.) mixtures of beans (great northern, navy, kidney, pinto, green split pea, black, garbanzo, lentils, black-eyed peas, etc.) Ham bone or possibly pork bones
    • 1 x Bay leaf
    • 1 lrg Onion, minced
    • 1 can (16 ounce.) tomatoes, cut up
    • 1 tsp Chili pwdr Salt & pepper to taste

    Directions

    1. Rinse beans. Place in large kettle, cover with about 2 qts water, bring to a boil. Remove from heat, cover and let stand for 1 to 2 hrs. Drain off water. Add in 2 qts fresh water (or possibly broth-bouillon), ham or possibly pork bones and bay leaf. Bring to a boil and simmer for 2 to 3 hrs. Remove and throw away bay leaf. Add in onion, tomatoes, chili pwdr, salt and pepper.
    2. Simmer 10 min more (or possibly longer).
    3. Serves 8.
