egg salad with bacon and pecan
This is a really good dish, I picked up with a friend. Enjoy!!! Ingredients
- 12 hard boiled eggs peeled and chopped
- 1 cup finely chopped celery
- 1/4 cup finely chopped green onions
- 3/4 pound bacon chopped, cooked crisp and drained
- 2 tsp horseradish
- 1 cup mayonnaise
- 1 tbsp creole mustard
- salt, black pepper, and cayenne to taste (cayenne Optional)
- 3 tbsp chopped pecans
- 1/2 cup chopped parsley
Directions
- combine the eggs, celery, onions and bacon in a large mixing bowl
- combine the horseradish, mayonnaise and mustard and fold into salad
- season to taste
- add pecans and parsley and mix gently
- serve at room temperature or chilled
- serve on toast or with chips
