egg salad with bacon and pecan

This is a really good dish, I picked up with a friend.

Ingredients

  • 12 hard boiled eggs peeled and chopped
  • 1 cup finely chopped celery
  • 1/4 cup finely chopped green onions
  • 3/4 pound bacon chopped, cooked crisp and drained
  • 2 tsp horseradish
  • 1 cup mayonnaise
  • 1 tbsp creole mustard
  • salt, black pepper, and cayenne to taste (cayenne Optional)
  • 3 tbsp chopped pecans
  • 1/2 cup chopped parsley

Directions

  1. combine the eggs, celery, onions and bacon in a large mixing bowl
  2. combine the horseradish, mayonnaise and mustard and fold into salad
  3. season to taste
  4. add pecans and parsley and mix gently
  5. serve at room temperature or chilled
  6. serve on toast or with chips
