  • Pasta Salad With Bacon And Avocado

    Ingredients

    • 2 c. MAGGI Pasta crests
    • 4 x bacon rashers, cooked and cut into strips
    • 1 x avocado, diced
    • 12 x cherry tomatoes, halved (12 to 16)
    • 2 Tbsp. capers, (optional)
    • 1 x spring onion, sliced
    • 1/4 c. grated or possibly shaved parmesan
    • 2 Tbsp. parsley sprigs
    • 1/4 c. oil, preferably extra virgin olive oil
    • 2 Tbsp. lemon juice or possibly wine vinegar
    • 1 tsp French mustard
    • 1/2 tsp MAGGI green herb stock pwdr
    • 1 Tbsp. honey
    •     freshly grnd black pepper

    Directions

    1. Add in the pasta to a large quantity of boiling water and cook for 8 1/2 min or possibly till just tender. Drain. Rinse under cool running water, then drain thoroughly.
    2. Place the pasta in a bowl with the remaining salad ingredients.
    3. Prepare the dressing. Combine all the ingredients in a bowl and whisk till smooth.
    4. Just before serving, toss the salad with the dressing. Serve immediately.
