    • 1 pound lean ground beef
    • 2 tablespoons olive oil
    • 1/2 cup finely chopped or grated onion
    • 2 cloves garlic, grated
    • 1 large egg
    • 1/2 cup bread crumbs
    • 1/2 teaspoon salt
    • 1/2 teaspoon ground black pepper
    • 1/2 teaspoon cumin
    • 1/2 teaspoon dried thyme
    • 10 slices cheddar

    Easy Stuffed Meatballs topped with your favorite sauce are looking right at you. Wouldn’t you be tempted? Don’t worry, it’s really easy to make these and it’s not impossible to make this picture real. Don’t you like it when there is an easy way of making your favorite recipe? Who doesn’t love cheese stuffed meatballs? You might find it a bit hard to stuff the meatballs though. Here is the easiest way of stuffing them with cheese, plus a yummy and creamy spinach.

    Easy stuffed meatballs recipe is one of those recipes I make for the friends who come over for dinner as I know that it never fails. I think it satisfies both eyes and taste buds, which makes these meatballs an ultimate dinner recipe for guests. As they are in small size and can be served as single pieces, they make perfect party food too. You don’t really need a knife and fork, just grab one with your two fingers and dive into it. You can eat the whole in two bites. Make sure you lick your fingers afterwards.

    So what makes these meatballs easy? Stuffing meatballs with cheese is sometimes a real pain. You need to stuff them and shape them into balls very carefully so that the melted cheese doesn’t leak. You don’t need to seal the meatballs in this recipe. Just give them a cup shape, bake until the meatballs are done and then stuff with cheddar and spinach. Bake until the cheese melts. Believe me it’s way easier because you don’t have to worry about any leaks. These are already open-faced and you even want the cheese to melt down in this recipe.

    My easy stuffed meatballs have two fillings; cheddar and creamy spinach. You will find two recipes in the recipe section indeed. That creamy spinach recipe is one of my favorite spinach recipes. I make it often in winter and either enjoy it as the main course –a wonderful vegan meal- or serve it as a side dish with meat or chicken. I sometimes use the leftovers as a pie or pastry filling too.

    Making this creamy spinach for these easy stuffed meatballs is not a must, but highly recommended. It takes the meatballs to next level. And it’s easy too, ready in 15-20 minutes. I suggest you to make it abundantly to serve it as a dip alongside the meatballs or just to have leftovers for the next day.

    I must warn you not to try cooking the meatballs on the stove. The cup-shaped meatballs gradually flatten if you do so and there will be no room to fill. I’ve tried it once to shorten the time and that was what I experienced.

    We love these finger lickingly good meatballs with hot chili sauce or mustard. So go ahead and top them with your favorite sauce.

    First make the spinach filling. Heat olive oil in a skillet and saute onion until translucent. Add in tomato paste and stir. Toss in chopped spinach and cover. Cook it over medium low heat for 5 minutes, add the spices and give it a good stir. Cover and cook for 10-15 minutes or until the spinach is soft and creamy. Put it aside.

    Preheat oven to 375F and line a baking pan with parchment paper or grease a cast iron skillet with olive oil.

    In a large mixing bowl, combine ground beef, olive oil, onion, garlic, egg, breadcrumbs and spices well. Take about 1/2 cup beef mixture, make it a ball and press into the center with your thumb and expand the hole with your fingers to give it a cup shape. Place it in the baking pan or cast iron skillet. Repeat this until you finish the beef mixture.

    Bake meatballs for 30-35 minutes. Remove from oven.Don’t worry if you see the holes over the meatballs are filled with its juice, just remove it with a spoon. Fold the cheddar slices in two and place in the top center of the meatballs. Top with a teaspoon of spinach. Put them back in oven and bake until the cheese melts, for about 5 minutes.

    Serve with some good sauces on hand like chili sauce or mustard.
