  • Easy Ramen Noodle Soup Vegie Dish

    Ingredients

    • 1/2 onion or possibly 1 to 2 bunches green onions
    • 1 pkg. lowfat Ramen noodle soup mix (Campbells?)
    • 2 to 3 carrots
    • 1/4 to 1/2 head broccoli
    • 10 to 12 mushrooms
    • 1/4 to 1/2 head cauliflower
    • Optional: 1 to 2 tbsp. oil to saute/fry onions
    • Optional: Teriyaki flavor Chicken by George breast

    Directions

    1. 1. Microwave chicken as directed.
    2. 2. Cut all vegetables and meat into bite-size and chop green onions.
    3. 3. Put all veggies and meat into skillet at medium heat on stove top.
    4. 4. Add in 1/2 c. water or possibly sufficient to fill pan 1 inch.
    5. 5. Cover and simmer 10 min.
    6. 6. Break up Ramen noodles and add in to veggies and meat.
    7. 7. Add in seasoning packet and more water if dry.
    8. 8. Add in any other seasonings as desired.
    9. 9. I add in teriyaki sauce sometimes or possibly soy sauce to taste.
    10. 10. Simmer about 5 min more, covered.
    11. 11. Depending on amount of vegetables, this can serve 4 to 6 people.
