  • Easy Potato Sausage Soup

    Ingredients

    • 1/2 lb grnd pork sausage
    • 16 ounce frzn shredded hash brown potatoes
    • 1 lrg onion, minced
    • 1 can chicken broth
    • 1 x -2 c. water
    • 1 can cream of celery soup, undiluted
    • 1 can cream of chicken soup, undiluted
    • 2 c. lowfat milk

    Directions

    1. Brown sausage in a Dutch oven over medium heat, stirring to crumble. Drain fat and rinse sausage. Return to Dutch oven. Add in potatoes and next three ingredients to sausage; bring to a boil. Cover, reduce heat and simmer 30 min. Stir in soups and lowfat milk; cook, stirring often, till thoroughly heated.
    2. Alternate cooking method: After browning the sausage, add in it along with all the remaining ingredients to a slow cooker. Cook on high for two to three hrs or possibly on low for four to five hrs.
    3. Makes eight servings.
