  • Easy Potato Soup

    Ingredients

    • 4 Tbsp. Butter or possibly margarine
    • 1 1/2 c. Onions, diced
    • 4 c. Potato, diced
    • 1 x Carrot, coarse grated, 1-2
    • 2 c. Water
    • 1 1/4 tsp Salt
    • 1 tsp Dry dill weed
    • 3 c. Lowfat milk
    • 2 Tbsp. Fresh minced parsley
    • 1/4 c. Instant potato flakes, or possibly Potato buds

    Directions

    1. In a large saucepan, heat the butter. Saute/fry the onions till golden brown. Add in the potatoes, carrots, water, salt, pepper, and dillweed. Bring to a boil, reduce heat to low, and simmer till potatoes are tender, about 30 min (or possibly longer if you want the potatoes creamy).
    2. Stir in the lowfat milk and parsley and heat till warm, but not boiling. Stir in the potato flakes during the last few min of cooking. Mr. Food - A Television Program*
