EASTERN SHORE CRAB CAKES
THIS IS AN OLD RECIPE FROM A FAMILY FROM THE EASTERN SHORES OF MARYLAND. THEY HAVE THE BEST CRABS THERE. Ingredients
- 1 POUND CRABMEAT
- SALT AND PEPPER TO TASTE
- 1 EGG
- 1/4 POUND BUTTER
- 1 TABLESPOON LEMON JUICE
- 1 HARD BOILED EGG
- 1 TABLESPOON WORCESTERSHIRE SAUCE
- BREAD CRUMBS (FROM 2-3 SLICES BREAD)
Directions
- PUT CRABMEAT IN A BOWL AND SEASON TO TASTE WITH
- SALT AND PEPPER
- ADD SLIGHTLY BEATEN EGG, MELTED BUTTER, LEMON JUICE, CUT UP HARD BOILED EGG, AND WORCESTERSHIRE.
- THEN ADD JUST ENOUGH SOFT BREAD CRUMBS TO MAKE IT
- INTO CAKES.
- FRY THE CAKES TO A GOLDEN BROWN
