Dried Prawns Yee Mee Soup
A brimming bowl of noodles with shredded cabbage, fish cakes, crispy fried dried prawns and garnished with spring onions. Ingredients
- 2 tbsp dried prawns - soaked for about 10 minutes.
- 6 garlic - crushed
- Cabbage (as needed) - shredded/sliced thinly
- 1/2 fish cake - rinsed and sliced thinly
- 1 tsp anchovies stock
- 2 tbsp oil
- Spring onions (as needed - shredded/sliced thinly
- 2 roll yee mee (or any other noodles you like) - rinsed
- Pepper and salt to taste
Directions
- Heat oil and fry dried prawns till crispy.
- Remove and keep aside.
- In the same oil, sauté garlic.
- Pour 1 liter of water.
- Season with anchovies stock, pepper and salt.
- Let it simmer till a boiling point.
- In a bowl, add noodle, cabbage, fish cake; top with fried prawns
- and spring onions.
- Pour soup over and serve immediately.
