  • Deep Fried Catfish With Hush Puppies

    Ingredients

    • 4 x catfish fillets - (8 ounce ea)
    • 1 c. lowfat milk
    • 1/8 tsp salt
    • 1/8 tsp freshly-grnd black pepper
    • 1/8 tsp paprika
    • 1 c. cornmeal Vegetable oil
    • 1 c. cornmeal
    • 2 Tbsp. baking pwdr
    • 1/2 tsp salt
    • 1/4 tsp freshly-grnd black pepper
    • 1/8 tsp freshly-grnd white pepper
    • 1/3 c. chopped onion
    • 1 x egg beaten
    • 1/4 c. lowfat milk

    Directions

    1. Rinse and pat catfish dry. In a shallow dish, mix together lowfat milk, salt, pepper, and paprika. Dip pcs of fish in lowfat milk mix. Roll fish in cornmeal and set pcs on waxed paper to dry.
    2. Heat 1 1/2 inches of vegetable oil to 350 degrees. Deep-fry fish, turning once, till golden. Drain on paper towels and keep hot.
    3. Hush Puppies: Mix cornmeal with baking pwdr, salt, pepper, and onion. Mix egg with lowfat milk and whisk into cornmeal.
    4. Spoon hush puppies into warm oil and fry till golden.
    5. This recipe yields 4 servings.
    6. Suggested Wine: Beverage suggestions: Light lager beer, Chenin Blanc.
    7. NOTES : Chef's Tip - Check the date on your baking pwdr to see if it is still current as it will have lost it's rising power if it is not.
