Deep Fried Catfish With Hush Puppies
Ingredients
- 4 x catfish fillets - (8 ounce ea)
- 1 c. lowfat milk
- 1/8 tsp salt
- 1/8 tsp freshly-grnd black pepper
- 1/8 tsp paprika
- 1 c. cornmeal Vegetable oil
- 1 c. cornmeal
- 2 Tbsp. baking pwdr
- 1/2 tsp salt
- 1/4 tsp freshly-grnd black pepper
- 1/8 tsp freshly-grnd white pepper
- 1/3 c. chopped onion
- 1 x egg beaten
- 1/4 c. lowfat milk
Directions
- Rinse and pat catfish dry. In a shallow dish, mix together lowfat milk, salt, pepper, and paprika. Dip pcs of fish in lowfat milk mix. Roll fish in cornmeal and set pcs on waxed paper to dry.
- Heat 1 1/2 inches of vegetable oil to 350 degrees. Deep-fry fish, turning once, till golden. Drain on paper towels and keep hot.
- Hush Puppies: Mix cornmeal with baking pwdr, salt, pepper, and onion. Mix egg with lowfat milk and whisk into cornmeal.
- Spoon hush puppies into warm oil and fry till golden.
- This recipe yields 4 servings.
- Suggested Wine: Beverage suggestions: Light lager beer, Chenin Blanc.
