  • Bronzed Catfish And Hush Puppies

    Ingredients

    • 18 ounce Catfish fillets, 6 ounces each
    • 1/4 c. Butter or possibly margarine, melted
    • 4 tsp Magic Seasoning Blends seafood magic, *Or possibly*
    • 1 tsp Salt, onion pwdr, gr.red pepper, basil, each *AND*
    • 1/2 tsp Garlic pwdr and thyme Lemon wedges
    • 1 c. Cornmeal
    • 1 c. All-purpose flour
    • 1 Tbsp. Baking pwdr
    • 2 tsp Magic Seasoning Blends seafood magic, *Or possibly*
    • 3/4 tsp Grnd red pepper, and
    • 1/2 tsp Salt, pepper, dry thyme, and
    • 1/4 tsp White pepper, and
    • 1/8 tsp Dry oregano leaves
    • 1/4 c. Green onions - tops only, very finely minced
    • 2 lrg Large eggs, beaten
    • 1 c. Lowfat milk
    • 2 Tbsp. Vegetable oil, + more for frying

    Directions

    1. Prep time: 10 min;
    2. Cooking Time: 8 min; Degree of difficulty: Easy
    3. 1. Brush both sides of fish with butter, then coat both sides with seasonings.
    4. 2. Heat 10-inch cast-iron skillet over medium-high heat till smoking, 3 to 5 min. Add in 2 fillets and cook till just opaque at center, about 2 min per side. Keep hot in oven and repeat with remaining fillets.
    5. Serve with lemon wedges and Hushpuppies.
    6. Makes 4 servings.
    7. Hush Puppies
    8. A great accompaniment to the catfish. Make these first and keep hot in a low oven while the fish cooks.
    9. Prep time: 10 min plus standing
    10. Cooking time: 5 min per batch
    11. Degree of difficulty: Easy
    12. 1. Combine cornmeal, flour, baking pwdr and spices in large bowl. Stir in green onions. Add in Large eggs and blend well.
    13. 2. Bring lowfat milk and oil to boil in small saucepan. Remove from heat and add in to flour mix in two batches, stirring well after each addition. Let stand 15 min.
    14. 3. Heat 4 inches oil to 350 F. in large saucepan or possibly deep fryer. Drop batter by tablespoonfuls into warm oil (don't crowd). Cook till dark golden and cooked through, about 2 1/2 min per side. Drain on paper towels.
    15. Keep hot while cooking remaining batter.
    16. Makes about 30.
    17. NOTES : Bronzed catfish is a lighter, faster, simpler version of the traditional blackened dish. Preheating your cast-iron skillet is essential.
    18. Use the Seafood Magic*Or possibly* the seasonings, not both.
