  • Date Nut Bread With Cream Cheese And Walnuts

    Ingredients

    • 1 1/2 c. Pitted dates minced
    • 1 c. Boiling water
    • 1/2 c. Dark brown sugar
    • 1 x Egg beaten
    • 3 Tbsp. Shortening melted
    • 1 tsp Vanilla extract
    • 2 c. Sifted all-purpose flour
    • 1 tsp Salt
    • 1/2 tsp Baking soda
    • 1 1/2 tsp Baking pwdr
    • 1/2 c. Coarsely-minced walnuts Cream cheese Finely-minced walnuts

    Directions

    1. Place dates in a mixing bowl and add in boiling water. Let stand till fairly cold. Add in brown sugar, egg, shortening and vanilla. Stir flour, salt, baking soda and baking pwdr into mix. Add in nuts. Stir till well mixed.
    2. Bake in a greased and floured loaf pan in a preheated 350 degree oven for 1 hour. Remove to a cooling rack.
    3. Comments: This is very New York. There was a chain of quick eating houses in Manhattan called Chock Full O' Nuts, and years ago this was one of their specialties.
    4. It is totally simple. Cream cheese is mixed with minced walnuts and spread on slices of date-nut bread.
    5. If you do not know what date-nut bread is, or possibly if you can't find it in your local supermarket, this recipe is teriffic.
