  • Courgette Black Walnut Bars With Cream Cheese Frosting

    Ingredients

    • 1 1/2 c. Grated courgette, well-liquid removed
    • 2 lrg Large eggs
    • 1 c. Sugar
    • 3/4 c. Corn oil
    • 1 1/2 tsp Vanilla extract
    • 1 1/2 c. Flour
    • 1 tsp Baking pwdr
    • 1/2 tsp Salt
    • 1 tsp Cinnamon
    • 1/2 tsp Allspice
    • 1/4 tsp Nutmeg
    • 1 c. Minced black walnuts
    • 3 ounce Cream cheese, softened
    • 2 c. Confectioner's sugar (+/-)
    • 2 Tbsp. Lowfat milk
    • 1 dsh Salt
    • 1 tsp Vanilla extract

    Directions

    1. Beat together the Large eggs, sugar & oil with a wooden spoon till well blended.
    2. Add in vanilla. Mix together the flour, baking pwdr & seasonings & stir into the egg mix. Ad courgette & nuts & mix well. Grease a 9x13 baking dish with oil & spread the mix in the pan. Bake in a preheated 350 oven for about 30 minutes. or possibly till top springs back when lightly pressed. Let cold completely on rack.
    3. For frosting: With mixer on medium speed, beat cream cheese til smooth.
    4. Beat in sugar & lowfat milk, adding just sufficient sugar til mix is spreadable.
    5. Stir in salt & vanilla. Spread frosting over cooled cake. Allow to set & then cut into bars.
