  • Date And Ginger Scones

    Ingredients

    • 250 gm Plain wholemeal flour, (8oz)
    • 1 1/2 tsp Baking pwdr
    • 50 gm Polyunsaturated margarine, (2oz)
    • 25 gm Dates, minced (1oz)
    • 25 gm Stem ginger in syrup, liquid removed and minced (1oz)
    • 25 gm Soft light brown sugar, (1oz)
    • 150 ml Skimmed lowfat milk, ( 1/4 pint)

    Directions

    1. Preheat the oven to Gas Mark 8/230 C/450 F.
    2. Lightly grease a baking sheet.
    3. Mix together the flour and baking pwdr, add in the margarine and rub it in with your fingertips till the mix resembles breadcrumbs.
    4. Add in the dates, ginger and sugar, mix well and make a well in the centre.
    5. Add in the lowfat milk and stir in with a fork to create a fairly soft dough. Turn on to a lightly floured surface and knead very lightly.
    6. Roll out to about 2cm ( 3/4 inch) thick and cut out rounds with a 5cm
    7. (2-inch) cutter.
    8. Place the scones on the prepared baking sheet and bake in the oven for 10-12 min or possibly till risen and hard.
    9. Transfer to a wire rack and leave to cold.
