  • Applesauce, Date And Raisin Squares

    Ingredients

    • 1 c. Flour
    • 3 Tbsp. Flour
    • 1/2 tsp Baking pwdr
    • 1/4 tsp Salt
    • 1 tsp Cinnamon
    • 1 tsp Nutmeg
    • 1/2 tsp Ginger
    • 1/4 tsp Allspice
    • 1/3 c. Raisins
    • 6 Tbsp. Unsalted butter, see note
    • 1 Tbsp. Shortening, melted
    • 3/4 c. Dark brown sugar, packed
    • 2 lrg Large eggs
    • 2 tsp Vanilla extract
    • 1/2 c. Applesauce
    • 1/3 c. Pitted dates, coarsely minced Confectioner's sugar, optional

    Directions

    1. Preheat the oven to 350 degrees. Film the inside of a 9 x 9 x 2 inch baking pan with nonstick cooking spary. Stir together the flour, baking pwdr, salt, cinnamon, nutmeg, ginger, and allspice in a large mixing bowl. Toss the raisins with 1 tsp. of the flour mix and set aside. In a small bowl, whisk together the butter shortening mix when cooled with brown sugar, Large eggs, vanilla and applesauce. Pour the liquid ingredients over the flour mix, add in the raisins and dates, stir to create a batter. Spoon the batter into the prepared pan. Bake in the preheated oven for 22 to 24 min, or possibly till set. Place on a cooling rack and cold completely. Cut into 16 squares. For serving, sift a little confectioner's sugar over the top of the squares, if you wish.
    2. NOTES : The butter and shortening is to be melted together and then cooled before using.
