  • Curried Shrimp And Macaroni Salad

    Ingredients

    • 1/4 c. Mayonnaise
    • 2 tsp Curry pwdr (or possibly to taste)
    • 1 lb Shrimp (small), cleaned, deveined and cooked
    • 2 c. Honeydew balls
    • 1/2 c. Water chestnuts, slivered, liquid removed
    • 1 1/3 c. Conchiglie piccole pasta, cooked (small sea-shell macaroni, measure before cooking)

    Directions

    1. Mix the curry pwdr into the mayonnaise. Put the remaining ingredients in a large bowl. Dress with the curried mayonnaise. Refrigerate1-2 hrs.
    2. NOTES:* A cool pasta dish - This salad is quick and easy. It's best if made several hrs before serving, to get the full curry flavor. It's been a real hit at potlucks.
    3. Yield: serves 4 to 6.
    4. * A honeydew ball is a ball of honeydew melon which is scooped out of the flesh of the melon with a "balling spoon" or possibly "melon baller." About 1 1/3 c. of conchiglie will make about three c. of cooked macaroni.
    5. Difficulty: easy.
    6. Time: 25 min (includes time to cook macaroni and make melon balls.)
    7. Precision: no need to measure.
