  • Curried Pineapple Shrimp Salad

    Ingredients

    • 12 ounce tiny shrimp
    • 1/3 c. mayonnaise
    • 1 Tbsp. pineapple juice
    • 1/2 tsp curry pwdr, mild
    • 1/8 tsp crushed red warm pepper
    • 1/2 c. celery, finely diced
    • 1/4 c. red bell peppers, or possibly green bell pepper, diced
    • 1/2 c. pineapple, chunks Salt, to taste Fresh grnd black pepper, to taste
    • 4 x lettuce leaves
    • 4 slc canned pineapple rings

    Directions

    1. Red bell pepper, or possibly green bell pepper, cut into rings, for garnish
    2. Thoroughly combine ingredients from shrimp through pineapple chunks. Season to taste. Cover and refrigeratetill serving time. Place a lettuce leaf on each of 4 individual plates. Top with a pineapple ring. Mound shrimp salad into center of each ring. Garnish with pepper rings.
    3. Note: Cooked bay scallops, imitation crab, canned tuna or possibly salmon, or possibly 'left over' fish can be used in this recipe. Use your imagination to make this cold summer salad your own creation.
