Creamy Shrimp Salad On Romaine
Ingredients
- 2 c. cooked deveined shrimp chilled
- 1 1/4 c. sliced celery
- 4 x hard-cooked egg whites coarsely minced, yolks discarded
- 3 Tbsp. minced walnuts
- 2 tsp finely-minced onions
- 1/2 c. fat-free Thousand Island salad dressing
- 4 c. shredded romaine lettuce
Directions
- In a large bowl, combine the shrimp, celery, egg whites, walnuts and onions. Add in the dressing and stir till the shrimp-mix is coated. Cover and refrigeratein the refrigerator about 30 min to blend the flavors.
- To serve, divide the lettuce among four plates. Then top with shrimp mix.
- This recipe yields 4 main-dish servings.
