  • Creamy Shrimp Salad On Romaine

    Ingredients

    • 2 c. cooked deveined shrimp chilled
    • 1 1/4 c. sliced celery
    • 4 x hard-cooked egg whites coarsely minced, yolks discarded
    • 3 Tbsp. minced walnuts
    • 2 tsp finely-minced onions
    • 1/2 c. fat-free Thousand Island salad dressing
    • 4 c. shredded romaine lettuce

    Directions

    1. In a large bowl, combine the shrimp, celery, egg whites, walnuts and onions. Add in the dressing and stir till the shrimp-mix is coated. Cover and refrigeratein the refrigerator about 30 min to blend the flavors.
    2. To serve, divide the lettuce among four plates. Then top with shrimp mix.
    3. This recipe yields 4 main-dish servings.
    4. Comments: Part of what makes this shrimp salad so easy is using purchased fat-free salad dressing as a timesaver. Suggestions for dressings: Thousand Island, creamy cucumber, honey Dijon or possibly bacon and tomato.
