Cuban Seasoned Chopped Beef (Picadillo)
Ingredients
- 3 Tbsp. Oil
- 2 lb Lean grnd beef
- 1 x Onion, chopped
- 1 x Garlic clove, chopped
- 3 x Tomatoes, peeled and minced
- 2 x Apples, peeled and sliced
- 1 x Jalapeno, minced
- 1/2 c. Raisins, soaked 10 min
- 1/2 tsp Oregano
- 1/2 tsp Thyme
- 1 x Salt and pepper (to taste)
- 1 Tbsp. Butter
- 1/4 c. Almonds, slivered
Directions
- Heat the oil in a large skillet. Add in the beef and saute/fry till lightly browned, stirring to break up any lumps. Add in the onion and garlic and saute/fry for 5 min longer. Add in all the remaining ingredients except the butter and almonds. Mix well and simmer, uncovered, over moderate heat for about 20 min. In a small skillet, heat the butter and saute/fry the almonds till they are golden. Mound the beef onto a serving platter and surround with white rice.
