  • Crock Pot Potato Soup

    This is a fabulous soup and very easy. Just put the ingredients in the crockpot and come home to a delish hot dinner!

    Ingredients

    • 8-10 Yukon Gold Potatoes (peeled and cubed)
    • 1 Can cream of chicken soup
    • 45 Oz Chicken Broth
    • 1/3 Onion (finely chopped)
    • 1 Package Cream cheese (room temp)

    Directions

    1. Mix the cream of chicken soup with broth and the cream cheese (blend well)
    2. add potatoes and onions
    3. Cook on Low for 6-8 hours
    4. Once soup is done, take the soup by batches and puree in blender and dump back in crock pot (this will give the soup an excellent smooth texture)
    5. Garnish with your favorite toppings such as chives, bacon crumbles, cheese
