Crock Pot Potato Soup
This is a fabulous soup and very easy. Just put the ingredients in the crockpot and come home to a delish hot dinner! Ingredients
- 8-10 Yukon Gold Potatoes (peeled and cubed)
- 1 Can cream of chicken soup
- 45 Oz Chicken Broth
- 1/3 Onion (finely chopped)
- 1 Package Cream cheese (room temp)
Directions
- Mix the cream of chicken soup with broth and the cream cheese (blend well)
- add potatoes and onions
- Cook on Low for 6-8 hours
- Once soup is done, take the soup by batches and puree in blender and dump back in crock pot (this will give the soup an excellent smooth texture)
- Garnish with your favorite toppings such as chives, bacon crumbles, cheese
