  • Creamy Shrimp & Mushroom Soup

    Ingredients

    • 1 med. onion, minced
    • 1 tbsp. butter
    • 2 1/4 c. water
    • 1 pkg. (4.9 ounce.) UNCLE BEN'S® Country Inn brand rice dish (creamy mushroom & wild
    • rice)
    • 2 c. lowfat milk
    • 8 ounce. med. shrimp, peeled & deveined
    • 3 tbsp. dry sherry
    • 3/4 teaspoon salt, optional
    • 2 tbsp. flour
    • 1 green onion with top, cut into short thin strips

    Directions

    1. Cook onion in butter in large saucepan for 3 min. Add in water and contents of rice and seasoning packets. Bring to a boil. Reduce heat, cover and simmer 8 min. Stir in 1 1/2 c. lowfat milk, shrimp, sherry and salt.
    2. Gradually add in remaining 1/2 c. lowfat milk to flour, stirring till smooth. Stir into soup. Cook over medium heat till soup is thickened and shrimp is opaque, stirring occasionally, about 5 min. Top with green onion strips. Makes 6 servings.
