        Do you like radishes? It's fall and I am definitely into making all kinds of soup. Creamy radish soup sounds unusual to say the least, but I assure you it tastes comforting and delicious.   My soups are inspired by what's in season and ......  Radishes are in season here in Bucks County, Pa. and the farmer's market has big beautiful bouquets of red juicy radishes.  My Social Life During Covid I met a friend at our local outdoor farmer's market, and we had a great time walking around and exploring all the wonderful food items for sale at the market! I was able to buy almost all the produce for this soup from the organic farmers. Unusual Combination of IngredientsThe soup is made from radishes, potatoes, onions, and .... apples!! - Just got stranger- it sounds weird, You will have to trust me on this one! Although I have seen recipes for cooked radishes, I have to admit we usually eat ours raw in salads. Cooking radishes in a soup was a first for me, and I was pleasantly surprised.  I Love the slightly pink blush colorThe potatoes add a creamy texture and the unpeeled apples give the soup a tad of sweetness and a lovely pink blush.  I make this soup in my Instant Pot Although I could make this luscious soup in a pot on the stove top, why would I when it is so much easier and clean-up is so much faster in my Instant Pot. I'll give you instructions to make this soup both ways! You choose! What Does the Soup Taste Like? I think it tastes like a potato soup with a hint of sweetness. It's creamy and soothing and if you ignore the fact that there are 2 cups of chopped radishes in the soup, you might not even notice them (do you taste the onions? no) Are Radishes Are Good For You?Did you know that radishes are a cruciferous vegetable such as cauliflower, kale, and broccoli? According to studies, cruciferous vegetables may be supportive in prevention or fighting certain kinds of cancer. Eat some raw and cook some in soup.. both ways are healthy. BTW- Instant Pots will probably be on sale on Amazon for Prime Days Oct 13 and Oct 14.  It might be a great time to get one. Side Note: WW Purple PlanAs a side note, for those following the WW purple plan, this creamy soup is only ZERO points.. .Just saying !! Ingredients:Olive oil spray for sautéing  2 cups of sliced onions2 cups of chopped potatoes2 cups of sliced radishes 3 cups of chopped apples, unpeeled4 cups of vegetable broth1 cup of waterSalt and freshly cracked pepper to taste  Instant Pot Directions: Spray the bottom of the Instant Pot insert liner with a little oil. Add onions and sauté for 4 minutes, stirring occasionally. Add potatoes, radishes, and apples and mix well. Sautee for 1 more minute and then add broth and water. Secure lid, close steam valve, and set to pressure cook for 7 minutes. When done, release steam manually according to the manufacturers directions. When all steam is released, carefully remove lid. Use an immersion blend to blend soup until creamy. Add salt and freshly cracked pepper if desired. Stove Top Directions: Spray the bottom of a soup pot with a little oil. Add onions and sauté for 4 minutes, stirring occasionally. Add potatoes, radishes, and apples and mix well. Sautee for 1 more minute and then add broth and water. Bring to a boil, reduce heat to a simmer and cook covered for 15-20 minutes (stirring occasionally) until potatoes are soft. Use an immersion blender to blend until creamy. Add salt and cracked pepper if desired. Notes:  You may have noticed that the steps for this soup are the same for both he Instant Pot and the stove top cooking until you add the broth and water.It's at that point that I find all the value of using the Instant Pot. Why?  The stove top method requires stirring, possibly wiping up spills, checking on it to see how it's doing, making sure you don't forget about it and it doesn't burn. On the other hand, the Instant Pot requires no supervision, and if I get distracted and forget about it, it will keep my soup warm without burning for hours.  Disclaimer: I am an affiliate for Amazon.
