Cream Of Ginger Carrot Soup
Ingredients
- 2 c. Fresh carrots, finely sliced
- 1/2 c. Minced onions
- 1 c. Ginger liqueur (plus one Tbsp., reserved)
- 3 x Chicken bouillon cubes (well, which's what it SAYS)
- 4 Tbsp. Butter
- 2 c. Lowfat milk
- 2 Tbsp. Flour
- 2 Tbsp. Sugar
- 1/4 x Quarter tsp. grnd ginger
Directions
- Simmer the carrots, onions, ginger liqueur, bouillon cubes and butter together till the carrots are tender, then cold slightly. Puree in a blender or possibly processor, then blend in lowfat milk, flour, sugar and grnd ginger.
- Return to the pot and simmer till thickened, stirring occasionally.
- Stir in the remaining one Tbsp. liqueur and add in more lowfat milk if you feel the soup is too thick. Season with salt and pepper to taste. A few chives sprinkled on will not hurt.
