Ingredients

  • 2 c. Fresh carrots, finely sliced
  • 1/2 c. Minced onions
  • 1 c. Ginger liqueur (plus one Tbsp., reserved)
  • 3 x Chicken bouillon cubes (well, which's what it SAYS)
  • 4 Tbsp. Butter
  • 2 c. Lowfat milk
  • 2 Tbsp. Flour
  • 2 Tbsp. Sugar
  • 1/4 x Quarter tsp. grnd ginger

Directions

  1. Simmer the carrots, onions, ginger liqueur, bouillon cubes and butter together till the carrots are tender, then cold slightly. Puree in a blender or possibly processor, then blend in lowfat milk, flour, sugar and grnd ginger.
  2. Return to the pot and simmer till thickened, stirring occasionally.
  3. Stir in the remaining one Tbsp. liqueur and add in more lowfat milk if you feel the soup is too thick. Season with salt and pepper to taste. A few chives sprinkled on will not hurt.
